I am passionate about my trusty slow cooker we've been friends for over twenty years now. Actually she's a bit like grandfather's old ax. I had two at one stage; but the old lid on the newer body and insert are still the original to me! I can't imagine my fast paced life without my crock pot - it is hard to explain the feeling of knowing you are coming home to a wonderful meal that is ready as soon as you are!

In the winter, I make heart warming, rich, fragrant and flavorful beef and chicken casseroles, stews, soups, chili and curries that take just a few minutes to prepare. In the summer, I often roast a chicken overnight, so I could put it in the fridge and have it cold with salad later. I stretch my food budget further, and increase the nutritional value of many meals by adding lentils, red kidney beans or chickpeas to dishes that wouldn't usually have them, and of course in the summer I always seem to be making a bean salad. So I cook up large quantities over night and freeze them for later use. In between, meatloaf, pot roast, potato bake, mac n cheese... chocolate fudge pudding, oh it seems like a million things! Can you tell my slow cooker cookbook is my favorite book?

I do all this with a manual crockpot. When I was working long days in the corporate world with a 45-90 minute journey each way, I would have appreciated the 'keep warm' function that a programmable slow cooker switches to after the specified cooking time has elapsed. There were many days when I left work late and then got further delayed in slow traffic, that I wondered what I would be coming home to. My life has changed, but because the crock pot is so convenient and easy to use for set and forget meals, I still use it nearly every day.

I have been doing some slow cooker reviews, and have found two slow cookers with some great features, as compared to others I have reviewed. The 'smart pot slow cooker' has intuitive programming, the easiest I've seen, just push the 'cook time' button until the cook time and temperature you want comes up. It couldn't be easier! When the cook time is over the cooker automatically switches to warm. (This one comes in a bonus - the Rival Little Dipper!)

The second one is a 'multi-cooker' slow cooker. It is a slow cooker, a rice cooker and an electric pressure cooking - wow imagine the extra things you could! But one of the benefits of this model in slow cooker mode, is it gets up to temperature rapidly, which is great for food safety, but also for taste, as it browns the onions and meat! If you have a big family or love canning your own food, then the All American 30 quart is probably on your wish list. It will cook large quantities of food and inexpensive meat cuts to a juicy tenderness in a very short time.

Sounds good? Let's take a closer look

The All American 30 quart can hold 19 pint Jars or 14 quart Jars so it will suit the most avid canner and feed the largest family. However one point to consider is its dimensions. It stands 19'' high and you may find that it may not be suitable if you have an above the stove microwave or something similar.One advantage due to the height of the 30 quart, is that when cooking you do not need to stoop to check the pressure gauge.

Loading and unloading of jars should ideally be done while the canner is still on the stove. This alleviates the need to slide the canner, which could damage the stove surface as well as the canner base. When filled it will weigh a ton and so it is not suitable for glass top or flat ranges.

The all American does not have a gasket. It uses exclusive precision machined faces to provide the seal. This means no more split gaskets when you are halfway through a cook and no frantic calls trying to locate a new one. Don't forget though to apply a film of Vaseline to the surfaces to aid the opening as per the manual.

Other features include an easy to read geared pressure gauge which is mounted on the top of the lid. This can easily be removed for cleaning or replacing by simply unscrewing out and screwing back in.

The pressure regulator weight comes with three settings 5, 10 and 15 pounds per square inch. The lid has a stay-cool Bakelite top handle, while six locking screws hold it securely in place for a perfect seal.

Providing extra safety are two automatic venting features, the safety control valve and an over pressure plug. Double thick edges provide protection on localized points of wear. The All American 30 comes with a canning rack and an instruction manual which includes various recipes.

Healthy and Quick Pressure Cooker Chicken Soup

This is a quick and easy way to make a delicious chicken soup. The pressure cooker is a great tool to have in the kitchen. It cooks super fast, seals in nutrition, and is not dangerous as some fear they are. Once you have one, and learn to use it properly, you will wonder why you waited so long to get one.

This soup is quick to make, nutritious and delicious.

5 SERVINGS

8 cups water

1/2 14.5 ounce can Italian seasoned stewed tomatoes

1 bay leave

5 pepper corns

1/4 teaspoon red pepper flakes

3/4 teaspoon salt

1/4 teaspoon dried thyme

3 uncooked chicken thighs, skin removed (2 legs make 1 thigh)

1. Put the above ingredients into a pressure cooker and stir. Place the lid on the cooker and cook the ingredients according to your pressure cooker's instructions for 16 minutes.

2. Release the pressure and open the pressure cooker. Remove the chicken pieces, bay leaves and peppercorns (if you can...not critical). Make sure you remove any small bones floating around in there.

Set the bones with the meat on them on a baking sheet where you can remove the meat from the bones. Put the picked-off meat on a plate and set it aside.

Discard the bones.

1/2 large onion, cut into large chunks

2 stalks celery, cut into thick slices

1-1/2 large carrots, cut into thick slices

1/2 garlic clove (or the equivalent in jarred garlic)

3. Put the above ingredients in the cooker and cook under pressure for 3 minutes.

1/2 head Napa cabbage, chopped (cut the white part into chunks)

----------------

4. Release the pressure from the cooker again, add the above cabbage and boil it (lid off, not under pressure) for 4 minutes or until tender. Remove the pot from the heat.

5. Place the set-aside chicken meat into the soup and stir the pot to evenly distribute the ingredients.

Season to taste, serve and enjoy.
